What is the South Beach Diet?

The South Beach diet was originally developed by cardiologist Dr. Arthur Agatston, to help heart patients and diabetics reduce their cholesterol levels. It isn''t complicated and doesn''t require that you starve yourself.
You can eat normal amounts of meat and fish, as well as cheese, eggs, vegetables and nuts. What you''ll need to cut back on are foods containing lots of simple carbohydrates. It involves a three-stage plan. In the first two-week phase, you eliminate foods like pasta, bread, rice, and fruit completely, but can eat plenty of meat and fish, as well as cheese, eggs, vegetables and nuts. In the second phase you start to re-introduce small amounts of some of the foods that were banned in phase one. The third phase is intended to strike a good balance that keeps the weight off and can be continued for life.
